Zorawar Kalra of Massive Restaurant Pvt. Ltd. is been on an expansion spree. He opened +94 Bombay in Mumbai, on January 18, and BO-TAI Switch and Swan in Delhi, on December 29 and January 11 respectively.
+94 Bombay’s menu is an amalgamation of the best of Sri Lankan and Maharashtrian dishes like Whole Baked Chicken, Kappa Crab Cutlet, Jaffna Goat curry, Thecha Prawns, Kothimbir Wadi, Jaffna Black Pepper Prawns, Srilankan Jaffna Goat Curry, Masala Dosa, Hoppers, Kombadiche Kalvan, Bombil Fry, Konkan Lobster Bisque, Shakarkand Chaat, Golden Smile, Kokum Sour, Watalappam, Coconut & Carrot Brownie, and Nankhatai Cheesecake and Konkan Berry Sour.
Located at Palladium Mall, the restaurant also has a one-of-a-kind juice bar. “The patrons can expect to comfort regional cuisine at its very finest here and at very honest pricing. The restaurant also has one-of-a-kind juice bar, the first in the history of Palladium and a true treat for parched shoppers and visitors at the restaurant,” says Kalra. The space has become popular for not just the food but also its vibrant interiors.
Swan, Karla’s newest offering in Delhi, serves Japanese and Italian cuisines. The show-stealer at this strategically located restaurant is its view! “Swan is a one-of-a-kind restaurant and bar that focuses on an incredible outdoor environment mixed with one of the most breathtaking terraces in South Delhi, offering an unrestricted view of the Qutub Minar. It is one of the very rare terraces with a tree rooted on the ground floor, making its way to the terrace,” says Kalra.
Signature dishes on the menu include the Miso Chilean sea bass, Tuna tataki ‘thin as air’ pizza, the wide Robata section featuring grilled vegetables and meats, while the drinks on offer include Cosplay Collins, Tekira Tea Punch, Shibuya Crossing and more. All the Italian pasta dishes are made fresh and in-house, the wood-fired oven serves fresh and handcrafted pizzas sand the cocktail menu is designed by the popular bartender from London, Dino.
The coolest new outpost is located at Shangri-La’s – Eros, hotel in Delhi. BO-TAI Switch is the brainchild of Zorawar and Dildeep. The verbal pun on ‘Switch’ in BO-TAI Switch connotes the dynamics of a chic dining space through the day that transitions into a high-energy, pulsating bar post-midnight.
A gastronomic delight, the restaurant serves Thai and European grills with a modern twist, serving dishes such as Crisp Caramelised prawns, Avocado and Truffle Pizza, and Pulled Pork Bao, Minced Chicken with Bails and Bird Eye Chillies, Melange of Wild Mushrooms with Thai Basil, Chicken Bulgogi and Kanomji Noodles. With a 60 feet long bar and a well-stocked Enoteca, the restaurant boasts of a 24-hour beverage license.
“The outpost’s beverage menu has been curated by internationally acclaimed bartenders from London, under the able leadership of Dino, who was the beverage menu consultant for BO-TAI, Mehrauli as well,” says Kalra.
All of his restaurants are COVID-ready as all the government safety norms. Social distancing is maintained and protocols for food safety and hygiene are adhered to. “We are going a step beyond using air filters for cleaning the restaurants as well using cloches to cover sanitized cutlery on the table so that there is no exposure to airborne bacteria,” he says.
