Founder Masque, Sage and Saffron A self-taught cook, Aditi Dugar found herself drawn to food from a very young age.Although she started cooking at the age of 16, it wasn’t until after the birth of her first child that Dugar decided to pursue her passion. This journey began with Dugar letting go of her career in finance to launch a niche catering company called Sage & Saffron. Post that, she worked on refining her skills as a baker at two of London’s popular Michelin starred restaurants – Le Gavroche and La Petite Maison. She soon ventured out of London to study chefs across the world, beginning in Thailand. In 2016, Dugar opened ingredient-driven restaurant Masque, after nearly two years of R&D across the country. Along with Masque and Sage & Saffron, Dugar also operates the kitchens at ARAKU Café in Bangalore, Seesaw in Mumbai, and her brand-new bakery TwentySeven Bakehouse whose kitchen is headed by Chef Rachelle Andrade. “Three things that I value in a person are honesty, efficiency, and somebody who’s an independent thinker.” Aditi Dugar 6 |
