| 5 Aditi Dugar Founder & Director, Urban Gourmet India Pvt. Ltd. A Mumbai girl, Aditi grew up surrounded by the foods of her mother’s and grandmother’s kitchens. This naturally led to some experiments in the kitchen—at 16, she started to cook and discovered a passion for baking. However, it was only after the birth of her first child that she gave up a career in finance to launch a niche catering company—Sage and Saffron. A self-taught cook, she went ahead and honed her baking talents in London at two-Michelin starred Le Gavroche and La Petite Maison. Thereafter, her next stop was Thailand where she trained extensively with a vegetarian street food vendor and took a stage at fine-dine restaurant Bo.Lan. Some of her stints were at restaurants Zuma and Tsunami. In 2016, she took a leap of faith and opened ingredient-driven restaurant Masque after two years of rigorous research and development across the country. In 2022, the modern Indian, tasting menu-only restaurant stood at 21 on the list of Asia’s 50 Best Restaurants, the highest in India. Along with Masque and Sage & Saffron, Dugar also operates the kitchens at ARAKU Café in Bangalore and ARAKU restaurant and Seesaw in Mumbai, and her bakery - TwentySeven Bakehouse, whose kitchen is headed by Chef Rachelle Andrade. Her advice to the younger generation, “If you have a clear vision, don’t be afraid to follow it; always make an effort to listen to those around you, and invest time and energy in your support system.” “Success is in building and executing a vision and seeing it come to life, but it’s also in knowing that I explored every option to try and achieve something I’ve set out to do.” A fourth-generation hotelier and graduate from Cornell University, New York, Aashica Khanna has been instrumental in shaping the luxury wellness landscape in India. As the head of IHHR Hospitality since 2008, she has been at the helm of planning and executing all the brand’s new projects and hotel launches. In her current role, Khanna leads the operations and business development for ‘Ananda in the Himalayas’, a project that was founded by her father Ashok Khanna in 2000. Today, it is recognised as one of the top destination spas in the world. A self-confessed conscious traveller, she believes luxury is not a tangible thing. In her words, “It’s a feeling. It’s being surrounded by beauty, quality, craftsmanship and the feeling that it evokes.” This philosophy reflects in the Ananda brand footprint that boasts exceptional hospitality products and mindful wellness offerings. Her favourite holiday remains a nice hotel with a beautiful white beach, anywhere in the world. For wellness, she prefers “... slow sunny days, self-reflection, Ayurveda, great workouts and clean eating.” As someone who has tasted success, what does it really mean to her? “Success is peace and happiness,” she concludes. Akanksha Arora CEO, Tribe Amrapali Akanksha Arora’s interest and inclination towards jewellery piqued when she married Tarang Arora, son of Rajiv Arora—the co-founder of Amrapali Jewels in 2008. After discovering a gap in the retail landscape that Amrapali was operating in, she decided to make the brand more futuristic, easy and accessible without compromising on the ethos of the mother brand. That’s how Tribe Amrapali was born–which began as an e-store for the younger and modern audience. As the CEO of Tribe Amrapali, Arora oversees the design and innovation for the brand. She is conscious about maintaining a balance—-where fresh contemporary designs take centre stage, while keeping the heritage and the legacy of the brand intact. Under her dynamic leadership, Tribe Amrapali has grown by leaps and bounds, with 15 outlets across the country and five more in the pipeline. As someone who is constantly hustling and working towards transforming the landscape of modern jewellery design in India, what’s her favourite form of wellness? “Eating healthy and exercising at least four times a week keeps me going. Behind its success are its co-founders Ambika Seth and Alice Helme, who have consistently offered quality produce to their patrons year on year. Seth spent a decade living and studying in Switzerland where she completed her Bachelor of Science in International Hospitality Management from The Ecole Hoteliere de Lausanne. She went on to work in Vietnam for two years where she set up resorts for Six Senses and then worked in asset management, overseeing seven leisure assets across Vietnam, including GHM and Hyatt properties, golf courses and luxury service apartments under the portfolio of Indochina Capital. As someone who is proud of her country, Seth returned to India and co-founded CAARA in 2014. She currently heads the back-end support systems for CAARA, overseeing the India operations. Simultaneously, she also launched FarmLove, a farming initiative that grows and supplies chemical free vegetables, fruits and herbs to various retail and institutions in Delhi and Gurugram. Her team works directly with farmers in Haryana to teach and empower them on chemical-free farming techniques. Beyond work, Seth loves to indulge in a spa day here and there. As the founder of House of Anita Dongre, she has been instrumental not just in reinventing fashion for the modern woman but also introducing a culture of mindful fashion to two generations of women. Dongre’s beginnings were rather humble—having launched her first brand from the balcony of her apartment, in 1995. Ever since, her vision to bring contemporary fashion to modern Indian women has grown manifold, with 2800 individuals and thousands of independent artisans being associated with the brand. Anuja Sinha Director, Moonshine Food Ventures Anuja Sinha, currently the Director at Delhi-based Moonshine Food Ventures, a leading hospitality company, was always inclined towards the hospitality sector. The company owns and operates some of the best names in the food and beverage space—including SAGA Cuisines of India, Cafe StayWoke, Nush Mush Bakery and Patisserie, PaPaYa Gurugram, Glasshouse: World Grill and Bar Gurugram, and various outlets of Farzi Cafe in Delhi. Archana Jain CEO, PR Pundit, Havas Red After working for seven-and-a-half years at a hotel company and managing corporate PR programmes at a PR consulting firm, Archana Jain set up PR Pundit to undertake benchmarking work in consumer PR in 1998. Over time, she has elevated the company’s status — making it a force to reckon with in the world of integrated communications. A pioneer in the space, Jain has steered the company to remain ahead of the curve. From identifying and nurturing an opportunity in consumer lifestyle and luxury at a time when opportunities were scarce, to embracing influencer marketing — she has always been unabashed about taking risks. Through its journey, PR Pundit (now PR Pundit Havas Red) has garnered appreciation from all quarters. With a penchant for fashion, design and visual merchandising, she brings her sense of art to the Indian and international food and beverage retail market. Design is at the core of all that she does—in fact, her taste is inclined towards chic modernity. The scheme of all her restaurants reflects her taste for minimalistic design complemented with perfect palettes. With her creative flair, Kalra is passionate about ensuring that the journey from the plate to the palate for each guest is an unforgettable one. Divya Aggarwal Founder, and Designer, Label Divya Aggarwal Divya Aggarwal, founder and designer of her eponymous luxury couture label is on a mission to shine the spotlight on India’s rich heritage, culture and craftsmanship through her unique designs. After gaining formal education in fashion design with a minor in design management from the Parsons School of Design in New York, she gained valuable experience with brands like KAZO and BL International. With over five years of experience, she worked towards launching her own label that marries contemporary aesthetics with timeless traditions. Her unique take on Indian fashion, breaking away from common trends and presenting a mix of global fashion influences like distinctive prints, vibrant colours and cutting-edge designs has helped shape her identity in an otherwise crowded space. Aggarwal’s label offers bespoke couture that reflects individuality and creativity. While evoking the very spirit of India with blouses, lehengas, and traditional adornments, she also hinges on western modernity with fusion skirts, corsets, and jackets. Garima Arora Chef-owner of GAA and Marigold, Founder of Food Forward India The chef-owner of Restaurant Gaa, a two Michelin-starred modern Indian restaurant and Marigold that offers freshly crafted Indian mithais, chaats and artisanal snacks in Bangkok Thailand, Garima Arora is a force to reckon with. She’s also the founder of Food Forward India—a not-for-profit initiative cataloguing the diversity of the cuisines of India. Having studied to be a journalist, Arora made the switch with a short cooking and studying stint in Paris, France. Since then, she has worked in some of the top kitchens of the world to eventually open Restaurant Gaa in April 2017. In 2018, Arora became the first Indian female chef to earn a Michelin star at the age of 32 years. In the following year, she was voted as Asia’s Best Female Chef 2019, while her restaurant Gaa officially entered the ranks of Asia’s 50 Best Restaurants, debuting at No. 16 with the Highest New Entry Award. In 2022, Arora was the winner of the Michelin Guide Young Chef Award. In 2023, she debuted as a judge on the popular cooking reality show MasterChef India Season 7. In December 2023, Restaurant Gaa received a second Michelin star in the 2024 MICHELIN Guide. To date, she is the only Indian female chef to win the Michelin star. What’s her favourite comfort food? Arora says, “I love chaat. Otherwise salted crisps with champagne.” There’s really no restaurant in India that features on the top of her list. I wouldn’t stay in one place.” Jui Kulkarni Sharma Director, Triton Hotels & Resorts - Raffles Udaipur & Fairmont Jaipur A luminary in the realm of luxury hospitality—Jui Kulkarni Sharma has been at the forefront of preserving the cultural tapestry of Rajasthan with an undying passion. Her presence for over a decade in this industry has earned her respect and recognition from some of the veterans in this space. Sharma’s childhood was spent amidst the opulent landscapes of the Middle East. This experience was instrumental in cultivating an appreciation for the finer things in life. Her academic pursuits led her to the prestigious halls of MIT Pune, where she honed her intellect and passion for the world of technology. In 2000, she found herself in the coastal state of Goa—where a new chapter in her career unfolded through her involvement in the pre-opening of The Majestic GOA. The turning point in her career was when she embarked on a journey with Le Meridien in Jaipur, in 2001. Sharma spearheaded the project coordination for the property. In 2007, she unveiled Fairmont Jaipur. From its inception, she poured her heart and soul into the property—within five years, it emerged as a jewel in the crown of luxury hotels.
